
Peanut Butter Cookies
Fork-flattened peanut butter cookies with crackled tops and sandy centres. Buttery and fragrant, with a bakery-quality crackle on top. Best the day they are baked, but they keep three days in a tin.
Ingredients
- Butter3 tbsp
- Salta pinch
- Eggs4
- Sugar3/4 cup
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Peanut Butter2 cups, chopped
- Brown Sugar1/2 cup
Instructions

Set the oven to 175 C / 350 F and line your trays so nothing sticks.

Sift the dry ingredients — flour, brown sugar, leavener — into a bowl and whisk briefly.

Beat the butter and sugars until creamy, add the eggs and vanilla, then stir in the dry mix.

Stir the peanut butter through the dough until evenly studded.

Scoop onto the trays, leaving room to spread, and bake 10-14 minutes until the edges set.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
