
Shortbread Fingers
Three-ingredient Scottish shortbread — sandy, buttery, impossible to improve. Soft-centred and generous, the sort that vanishes warm off the tray. Sandwich two with a scoop of ice cream for an instant dessert upgrade.

- Salta pinch
- Eggs1
- Sugar1 tsp
- Baking Powder1/2 tsp
- Vanilla Extract1 cup, chopped
- Rice Flour1 cup

Preheat the oven to 180 C / 350 F and get two baking sheets ready.

Sift the dry ingredients — flour, sugar, leavener — into a bowl and whisk briefly.

Beat the butter and sugars until creamy, add the eggs and vanilla, then stir in the dry mix.

Press the butter into the dough in two additions so every piece gets its share.

Scoop onto the trays, leaving room to spread, and bake 10-14 minutes until the edges set.
