
Nankhatai
Ghee-rich Indian shortbread that crumbles at a look, the chai's oldest companion. Soft-centred and generous, the sort that vanishes warm off the tray. Sandwich two with a scoop of ice cream for an instant dessert upgrade.
Ingredients
- Butter1/2 cup, softened
- Salta pinch
- Ghee3 tbsp
- Eggs1
- Sugar1 tsp
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Gram Flour1 cup
- Green Cardamom1 tsp
Instructions

Set the oven to 175 C / 350 F and line your trays so nothing sticks.

Whisk the flour, gram flour and leavening together in a bowl so everything is evenly distributed.

Beat the butter and sugars until creamy, add the eggs and vanilla, then stir in the dry mix.

Stir the ghee through the dough until evenly studded.

Chill the dough twenty minutes, scoop, and bake until the edges are golden and centres soft.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
