
Creme Brulee
Custard under a torched sugar glass — the crack of the spoon is the whole point. Silky and spoonable, with a clean, comforting sweetness. Make it a day ahead — it only improves overnight.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk2 cups
- Sugar1 tsp
- Vanilla Extract1 cup, chopped
- Egg Yolk1 cup, chopped

Chill your bowls and whisk if you are working with cream — cold cream whips better.

Warm the milk with the egg yolk gently until steaming, not boiling, so the base stays smooth.

Whisk the heavy cream with the sugar, then temper with a ladle of the hot milk, whisking hard.

Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.

Chill until fully set — overnight is best — and finish with a scatter of sugar.

Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
