
Meringue Kisses
Crisp-shelled meringue piped small, the calorie-light cookie that shatters sweetly. Crisp at the edges, chewy in the middle, with every bite loaded. Best the day they are baked, but they keep three days in a tin.
Ingredients
- Butter1/2 cup, softened
- Salta pinch
- Eggs4
- Sugar1 tsp
- Baking Powder1/2 tsp
- Vanilla Extract1 cup, chopped
- Almonds1/4 cup, blanched and slivered

Preheat the oven to 180 C / 350 F and get two baking sheets ready.

Whisk the flour, sugar and leavening together in a bowl so everything is evenly distributed.

Beat the butter and sugars until creamy, add the eggs and vanilla, then stir in the dry mix.

Fold in the eggs last so the streaks and chunks stay distinct.

Roll or scoop the dough, bake 11-13 minutes, then cool on the tray five minutes — they finish setting as they cool.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
