
Date Squares
Oat crumble sandwiching date caramel, the retro lunchbox square. Buttery and fragrant, with a bakery-quality crackle on top. Serve with cold milk, coffee, or packed into lunchboxes.
Ingredients
- Butter3 tbsp
- Salta pinch
- Eggs1
- Sugar3/4 cup
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Brown Sugar1/2 cup
- Rolled Oats1 cup
- Dates1 cup, pitted and chopped

Set the oven to 175 C / 350 F and line your trays so nothing sticks.

Sift the dry ingredients — flour, rolled oats, leavener — into a bowl and whisk briefly.

Cream butter with both sugars until fluffy, beat in the egg, then fold in the flour mixture.

Press the dates into the dough in two additions so every piece gets its share.

Scoop onto the trays, leaving room to spread, and bake 10-14 minutes until the edges set.

Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
