
Anzac Biscuits
Golden-syrup oat biscuits with wartime history and coconut crunch. Soft-centred and generous, the sort that vanishes warm off the tray. Best the day they are baked, but they keep three days in a tin.
Ingredients
- Butter3 tbsp
- Honey2 tbsp
- Salta pinch
- Eggs1
- Sugar3/4 cup
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Grated Coconut1 cup
- Rolled Oats1 cup

Preheat the oven to 180 C / 350 F and get two baking sheets ready.

Sift the dry ingredients — flour, grated coconut, leavener — into a bowl and whisk briefly.

Beat the butter and sugars until creamy, add the eggs and vanilla, then stir in the dry mix.

Fold in the rolled oats last so the streaks and chunks stay distinct.

Chill the dough twenty minutes, scoop, and bake until the edges are golden and centres soft.
Chef's tip
Salt is the missing ingredient in most home desserts — a small pinch makes chocolate and caramel taste more like themselves.
