Bread and Butter Pudding
Buttered bread layered with custard and raisins, the thrifty British classic. Silky and spoonable, with a clean, comforting sweetness. Lovely with a few berries or a thin biscuit on the side.
Ingredients
- Butter3 tbsp
- Salta pinch
- Milk2 cups
- Sugar1/3 cup
- Vanilla Extract1 tsp
- Bread4 slices
- Egg Yolk1 cup, chopped
Optional extras
- Golden Raisins2 tbsp
Instructions
- 1
Chill your bowls and whisk if you are working with cream — cold cream whips better.
- 2
Scald the milk with the butter — small bubbles at the edge, never a rolling boil.
- 3
Combine the bread with the sugar; stream in the hot milk slowly so nothing curdles.
- 4
Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.
- 5
Chill until fully set — overnight is best — and finish with a scatter of egg yolk.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
