
Baked Custard Nutmeg
Nutmeg-freckled baked custard, the quiet grandparent of all custard desserts. Cool and creamy, the kind of dessert that calms a big meal down. Lovely with a few berries or a thin biscuit on the side.
Ingredients
- Salta pinch
- Milk1 litre
- Sugar1 tsp
- Vanilla Extract1 tsp
- Egg Yolk2 cups, chopped
- Nutmeg1/2 tsp, freshly grated
Instructions

Set out all ingredients and the serving dishes first; the cooking itself moves quickly.

Combine the milk, milk and sugar, stirring until dissolved, then take it off the heat.

Beat the egg yolk and sugar together, then ease in the warm milk a little at a time.

Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.

Pour into dishes, chill at least four hours, and serve cold with sugar on top.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
