Chocolate Mousse
Three-ingredient chocolate mousse — cloud-textured, restaurant-dressed. Smooth, wobbly and elegant — restaurant-simple, home-easy. Lovely with a few berries or a thin biscuit on the side.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk2 cups
- Sugar1 tsp
- Vanilla Extract1 tsp
- Dark Chocolate2 cups, chopped
- Egg Yolk1 cup, chopped

Gather everything before you start — custards punish multitasking.

Combine the milk, heavy cream and sugar, stirring until dissolved, then take it off the heat.

Combine the dark chocolate with the sugar; stream in the hot milk slowly so nothing curdles.

Stir over medium-low until it visibly thickens, eight to ten minutes — patience here is everything.

Divide between glasses, press clingfilm onto the surface, chill until set, then crown with egg yolk.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
