Banana Pudding Southern
Vanilla pudding layered with bananas and biscuits, the Southern church-picnic standard. Silky and spoonable, with a clean, comforting sweetness. Lovely with a few berries or a thin biscuit on the side.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk2 cups
- Sugar1/3 cup
- Vanilla Extract1 cup, chopped
- Condensed Milk1/2 cup
- Banana3, ripe and mashed
Instructions
- 1
Gather everything before you start — custards punish multitasking.
- 2
Combine the milk, condensed milk and sugar, stirring until dissolved, then take it off the heat.
- 3
Combine the banana with the sugar; stream in the hot milk slowly so nothing curdles.
- 4
Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.
- 5
Divide between glasses, press clingfilm onto the surface, chill until set, then crown with vanilla extract.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
