English Trifle
Layered trifle in a glass bowl — sponge, custard, cream, the buffet centrepiece. Cool and creamy, the kind of dessert that calms a big meal down. Lovely with a few berries or a thin biscuit on the side.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk2 cups
- Sugar1 tsp
- Vanilla Extract1 cup, chopped
- Golden Raisins2 tbsp
Instructions
- 1
Chill your bowls and whisk if you are working with cream — cold cream whips better.
- 2
Scald the milk with the vanilla extract — small bubbles at the edge, never a rolling boil.
- 3
Combine the heavy cream with the sugar; stream in the hot milk slowly so nothing curdles.
- 4
Stir over medium-low until it visibly thickens, eight to ten minutes — patience here is everything.
- 5
Pour into dishes, chill at least four hours, and serve cold with golden raisins on top.
Chef's tip
Salt is the missing ingredient in most home desserts — a small pinch makes chocolate and caramel taste more like themselves.
