Classic Tiramisu
Coffee-dipped biscuits under mascarpone clouds, the no-bake Italian legend. Silky and spoonable, with a clean, comforting sweetness. Serve chilled, straight from the fridge, in small glasses or ramekins.
Ingredients

- Sugar1/3 cup
- Vanilla Extract1 tsp
- Dark Chocolate1 cup, chopped
- Egg Yolk1 cup, chopped
- Instant Coffee2 tbsp
- Mascarpone Cheese250 g

Chill your bowls and whisk if you are working with cream — cold cream whips better.

Combine the milk, instant coffee and sugar, stirring until dissolved, then take it off the heat.

Whisk the mascarpone cheese with the sugar, then temper with a ladle of the hot milk, whisking hard.

Return to gentle heat and stir without stopping until it thickens enough to cloak the spoon.

Pour into dishes, chill at least four hours, and serve cold with egg yolk on top.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
