Chocolate Pudding Cups
Stovetop chocolate pudding, the scratch-built version of the childhood cup. Silky and spoonable, with a clean, comforting sweetness. Serve chilled, straight from the fridge, in small glasses or ramekins.
Ingredients
- Salta pinch
- Milk1 litre
- Cornstarch1 cup, chopped
- Sugar1/3 cup
- Vanilla Extract1 tsp
- Dark Chocolate1 cup, chopped
- Cocoa Powder1/2 cup

Chill your bowls and whisk if you are working with cream — cold cream whips better.

Combine the milk, cornstarch and sugar, stirring until dissolved, then take it off the heat.

Whisk the cocoa powder with the sugar, then temper with a ladle of the hot milk, whisking hard.

Stir over medium-low until it visibly thickens, eight to ten minutes — patience here is everything.

Chill until fully set — overnight is best — and finish with a scatter of milk.
Chef's tip
Salt is the missing ingredient in most home desserts — a small pinch makes chocolate and caramel taste more like themselves.
