
Butterscotch Pudding
Brown sugar caramelised into butterscotch custard, the forgotten retro star. Cool and creamy, the kind of dessert that calms a big meal down. Lovely with a few berries or a thin biscuit on the side.
Ingredients
- Butter3 tbsp
- Heavy Cream1/4 cup
- Salta pinch
- Milk2 cups
- Sugar1/3 cup
- Vanilla Extract1 tsp
- Brown Sugar1/2 cup
- Egg Yolk1 cup, chopped

Chill your bowls and whisk if you are working with cream — cold cream whips better.

Scald the milk with the butter — small bubbles at the edge, never a rolling boil.

Combine the brown sugar with the sugar; stream in the hot milk slowly so nothing curdles.

Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.

Pour into dishes, chill at least four hours, and serve cold with heavy cream on top.
