Coffee Panna Cotta
Espresso-scented panna cotta, the after-dinner dessert for coffee people. Cool and creamy, the kind of dessert that calms a big meal down. Make it a day ahead — it only improves overnight.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk2 cups
- Sugar1 tsp
- Vanilla Extract1 tsp
- Instant Coffee2 tbsp
- Gelatin2 tsp

Scald the milk with the instant coffee — small bubbles at the edge, never a rolling boil.

Beat the heavy cream and sugar together, then ease in the warm milk a little at a time.

Return to gentle heat and stir without stopping until it thickens enough to cloak the spoon.

Divide between glasses, press clingfilm onto the surface, chill until set, then crown with gelatin.

Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
