Mango Mousse
Mango pulp folded into cream, the tropical mousse that sets in glasses. Smooth, wobbly and elegant — restaurant-simple, home-easy. Serve chilled, straight from the fridge, in small glasses or ramekins.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk2 cups
- Sugar1 tsp
- Vanilla Extract1 tsp
- Mango2, pureed
- Gelatin2 tsp
Instructions
- 1
Gather everything before you start — custards punish multitasking.
- 2
Warm the milk with the heavy cream gently until steaming, not boiling, so the base stays smooth.
- 3
Whisk the mango with the sugar, then temper with a ladle of the hot milk, whisking hard.
- 4
Stir over medium-low until it visibly thickens, eight to ten minutes — patience here is everything.
- 5
Chill until fully set — overnight is best — and finish with a scatter of gelatin.
Chef's tip
Salt is the missing ingredient in most home desserts — a small pinch makes chocolate and caramel taste more like themselves.
