
Caramel Rice Pudding
Rice pudding enriched with caramel, the sticky-toffee-adjacent comfort bowl. Silky and spoonable, with a clean, comforting sweetness. Make it a day ahead — it only improves overnight.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Rice3/4 cup
- Milk1 litre
- Sugar1/3 cup
- Vanilla Extract1 tsp
- Brown Sugar1/2 cup

Set out all ingredients and the serving dishes first; the cooking itself moves quickly.

Scald the milk with the milk — small bubbles at the edge, never a rolling boil.

Beat the rice and sugar together, then ease in the warm milk a little at a time.

Stir over medium-low until it visibly thickens, eight to ten minutes — patience here is everything.

Divide between glasses, press clingfilm onto the surface, chill until set, then crown with brown sugar.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
