Maple Pots de Creme
Maple-sweetened custard baked in ramekins, the Canadian answer to creme brulee. Silky and spoonable, with a clean, comforting sweetness. Lovely with a few berries or a thin biscuit on the side.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk1 litre
- Sugar1/3 cup
- Vanilla Extract1 tsp
- Maple Syrup1 cup, chopped
- Egg Yolk2 cups, chopped
Instructions

Gather everything before you start — custards punish multitasking.

Combine the milk, maple syrup and sugar, stirring until dissolved, then take it off the heat.

Beat the egg yolk and sugar together, then ease in the warm milk a little at a time.

Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.

Divide between glasses, press clingfilm onto the surface, chill until set, then crown with heavy cream.
