
Pineapple Sorbet
Pineapple sorbet straight from the fruit, the tropical palate cleanser. Cold, creamy and scoopable — no ice crystals, no apologies. Serve in chilled bowls or cones straight from the freezer.
Ingredients
- Salta pinch
- Lemon1
- Milk1 cup
- Sugar1 tsp
- Vanilla Extract1 tsp
- Pineapple2 cups, chopped
- Coconut Water1 cup, chopped
Instructions

Get everything cold: the base, the churn bowl, even the container you will freeze it in.

Combine the sugar with the lemon, stirring until no grains remain, then chill the base.

Blend in the pineapple — taste again; the frozen version will be less sweet and less intense than this.

Churn in the ice cream maker until thick and soft-serve texture, 20-25 minutes.

Transfer to a container, press a sheet of parchment on the surface, and freeze four hours until scoopable.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
