Honey Yogurt Semifreddo
Semi-frozen semifreddo, the Italian ice cream cake that slices clean. A proper small-batch scoop that melts slowly and cleanly. Serve in chilled bowls or cones straight from the freezer.
Ingredients
- Yogurt2 cups, whisked
- Heavy Cream1/4 cup
- Honey2 tbsp
- Salta pinch
- Milk1 cup
- Sugar1/2 cup
- Vanilla Extract1 tsp
- Almonds1/4 cup, blanched and slivered

Chill the mixture base thoroughly before churning — cold bases freeze with finer, creamier texture.

Combine the sugar with the heavy cream, stirring until no grains remain, then chill the base.

Stir or blend the yogurt through the chilled base until smooth and evenly flavoured.

Churn until it holds a soft peak and mounds slowly off the paddle.

Freeze solid for at least four hours, then let it sit five minutes at room temperature before scooping.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
