Sopapilla Cheesecake Bars
Crescent-dough cheesecake bars dusted in cinnamon sugar, the potluck legend. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. A slice of sharp cheese alongside is old-school and excellent.
Ingredients
- Butter3 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar1 tsp
- Wheat Flour3 cups
- Cream Cheese2 cups, chopped
Instructions
- 1
Cube the cold butter and return it to the fridge while you measure the rest.
- 2
Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.
- 3
Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.
- 4
Work the cream cheese and wheat flour into the dough, folding gently for even distribution.
- 5
Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
