
French Macarons
Almond shells with feet, filled with chocolate ganache — the Parisian show-off. Crisp at the edges, chewy in the middle, with every bite loaded. Sandwich two with a scoop of ice cream for an instant dessert upgrade.
Ingredients
- Butter1/2 cup, softened
- Salta pinch
- Eggs1
- Sugar1 tsp
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Dark Chocolate1 cup, chopped
- Almonds1/4 cup, blanched and slivered
- Egg Yolk1 cup, chopped

Heat the oven to 175 C / 350 F and line two trays with parchment.

Sift the dry ingredients — flour, egg yolk, leavener — into a bowl and whisk briefly.

Beat the butter and sugars until creamy, add the eggs and vanilla, then stir in the dry mix.

Fold in the almonds last so the streaks and chunks stay distinct.

Chill the dough twenty minutes, scoop, and bake until the edges are golden and centres soft.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
