
Lemon Bars
Buttery shortcrust under a lemon curd layer dusted with icing sugar. Buttery and fragrant, with a bakery-quality crackle on top. Best the day they are baked, but they keep three days in a tin.
Ingredients
- Butter1/2 cup, softened
- Salta pinch
- Lemon1
- Eggs1
- Sugar3/4 cup
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Shortcrust Pastry1 cup, chopped
- Egg Yolk1 cup, chopped
- Lemon Zest1 tbsp
Instructions

Heat the oven to 175 C / 350 F and line two trays with parchment.

Combine the flour, shortcrust pastry and a pinch of salt, then set the bowl aside.

Work the butter and sugar to a paste, add eggs, then bring the dough together with the dry ingredients.

Press the lemon into the dough in two additions so every piece gets its share.

Roll or scoop the dough, bake 11-13 minutes, then cool on the tray five minutes — they finish setting as they cool.
Chef's tip
Weigh your flour if you can; cup measures can be off by twenty percent either way.
