Coconut Macaroons
Chewy coconut mounds dipped in chocolate, the five-ingredient cookie. Soft-centred and generous, the sort that vanishes warm off the tray. Best the day they are baked, but they keep three days in a tin.
Ingredients
- Butter1/2 cup, softened
- Salta pinch
- Eggs1
- Sugar3/4 cup
- Baking Powder1/2 tsp
- Vanilla Extract1 cup, chopped
- Egg Yolk1 cup, chopped
- Grated Coconut1 cup
- Condensed Milk1/2 cup

Heat the oven to 175 C / 350 F and line two trays with parchment.

Whisk the flour, condensed milk and leavening together in a bowl so everything is evenly distributed.

Beat the butter and sugars until creamy, add the eggs and vanilla, then stir in the dry mix.

Press the grated coconut into the dough in two additions so every piece gets its share.

Roll or scoop the dough, bake 11-13 minutes, then cool on the tray five minutes — they finish setting as they cool.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
