
Gingerbread Cookies
Cut-out spiced cookies, the smell of December in one oven session. Crisp at the edges, chewy in the middle, with every bite loaded. Sandwich two with a scoop of ice cream for an instant dessert upgrade.
Ingredients
- Butter1/2 cup, softened
- Honey2 tbsp
- Salta pinch
- Ginger2-inch piece
- Eggs1
- Sugar3/4 cup
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Ground Cinnamon1 tsp
- Nutmeg1/2 tsp, freshly grated

Set the oven to 175 C / 350 F and line your trays so nothing sticks.

Whisk the flour, ground cinnamon and leavening together in a bowl so everything is evenly distributed.

Cream butter with both sugars until fluffy, beat in the egg, then fold in the flour mixture.

Press the ginger into the dough in two additions so every piece gets its share.

Chill the dough twenty minutes, scoop, and bake until the edges are golden and centres soft.

With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
