Cornstarch-soft cookies sandwiching slow caramel, the Latin dulce classic. Crisp at the edges, chewy in the middle, with every bite loaded. Best the day they are baked, but they keep three days in a tin.

Ingredients

  • Butter3 tbsp
  • Salta pinch
  • Eggs1
  • Cornstarch1 cup, chopped
  • Sugar3/4 cup
  • Baking Powder1/2 tsp
  • Vanilla Extract1 tsp
  • Grated Coconut1 cup
  • Condensed Milk1/2 cup

Instructions

    Heat the oven to 175 C / 350 F and line two trays with parchment.

    Whisk the flour, butter and leavening together in a bowl so everything is evenly distributed.

    Beat the butter and sugars until creamy, add the eggs and vanilla, then stir in the dry mix.

    Stir the condensed milk through the dough until evenly studded.

    Scoop onto the trays, leaving room to spread, and bake 10-14 minutes until the edges set.

Chef's tip

Weigh your flour if you can; cup measures can be off by twenty percent either way.
