
Pistachio Shortbread
Buttery shortbread flecked green with pistachio and edged in nuts. Buttery and fragrant, with a bakery-quality crackle on top. Serve with cold milk, coffee, or packed into lunchboxes.
Ingredients
- Butter3 tbsp
- Salta pinch
- Eggs1
- Sugar1 tsp
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Rice Flour1 cup
- Pistachios1/2 cup, chopped
Instructions

Set the oven to 175 C / 350 F and line your trays so nothing sticks.

Whisk the flour, butter and leavening together in a bowl so everything is evenly distributed.

Work the butter and sugar to a paste, add eggs, then bring the dough together with the dry ingredients.

Press the pistachios into the dough in two additions so every piece gets its share.

Roll or scoop the dough, bake 11-13 minutes, then cool on the tray five minutes — they finish setting as they cool.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
