Espresso Chocolate Chip Cookies
A teaspoon of espresso makes chocolate chip cookies taste more like themselves. Crisp at the edges, chewy in the middle, with every bite loaded. Best the day they are baked, but they keep three days in a tin.
Ingredients
- Butter3 tbsp
- Salta pinch
- Eggs1
- Sugar3/4 cup
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Brown Sugar1/2 cup
- Chocolate Chips1 cup
- Instant Coffee2 tbsp
Instructions

Set the oven to 175 C / 350 F and line your trays so nothing sticks.

Combine the flour, chocolate chips and a pinch of salt, then set the bowl aside.

Beat the butter and sugars until creamy, add the eggs and vanilla, then stir in the dry mix.

Stir the instant coffee through the dough until evenly studded.

Chill the dough twenty minutes, scoop, and bake until the edges are golden and centres soft.
