Banana Oat Cookies
Two-ingredient energy at heart — banana-oat cookies for breakfast denial. Soft-centred and generous, the sort that vanishes warm off the tray. Best the day they are baked, but they keep three days in a tin.
Ingredients
- Butter1/2 cup, softened
- Honey2 tbsp
- Salta pinch
- Eggs1
- Sugar3/4 cup
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Walnuts1 cup, chopped
- Banana3, ripe and mashed
- Rolled Oats1 cup
Instructions
- 1
Preheat the oven to 180 C / 350 F and get two baking sheets ready.
- 2
Sift the dry ingredients — flour, rolled oats, leavener — into a bowl and whisk briefly.
- 3
Work the butter and sugar to a paste, add eggs, then bring the dough together with the dry ingredients.
- 4
Fold in the banana last so the streaks and chunks stay distinct.
- 5
Roll or scoop the dough, bake 11-13 minutes, then cool on the tray five minutes — they finish setting as they cool.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
