Chai Spice Cookies
Cardamom-forward spiced sugar cookies, the chai break in biscuit form. Buttery and fragrant, with a bakery-quality crackle on top. Serve with cold milk, coffee, or packed into lunchboxes.
Ingredients

- Salta pinch
- Eggs1
- Sugar1 tsp
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Ground Cinnamon1 tsp
- Green Cardamom2 cups, chopped

Preheat the oven to 180 C / 350 F and get two baking sheets ready.

Sift the dry ingredients — flour, ground cinnamon, leavener — into a bowl and whisk briefly.

Work the butter and sugar to a paste, add eggs, then bring the dough together with the dry ingredients.

Press the green cardamom into the dough in two additions so every piece gets its share.

Roll or scoop the dough, bake 11-13 minutes, then cool on the tray five minutes — they finish setting as they cool.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
