Tahini Sesame Cookies
Middle Eastern tahini cookies — savoury-depth sweetness, rolled in seeds. Buttery and fragrant, with a bakery-quality crackle on top. Sandwich two with a scoop of ice cream for an instant dessert upgrade.

- Sesame Seeds1 tsp
Instructions
- 1
Preheat the oven to 180 C / 350 F and get two baking sheets ready.
- 2
Whisk the flour, sesame seeds and leavening together in a bowl so everything is evenly distributed.
- 3
Work the butter and sugar to a paste, add eggs, then bring the dough together with the dry ingredients.
- 4
Fold in the tahini last so the streaks and chunks stay distinct.
- 5
Chill the dough twenty minutes, scoop, and bake until the edges are golden and centres soft.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
