Coconut Panna Cotta
Dairy-free panna cotta in coconut milk, toasted flakes on top. Smooth, wobbly and elegant — restaurant-simple, home-easy. Serve chilled, straight from the fridge, in small glasses or ramekins.
Ingredients

- Milk2 cups
- Sugar1 tsp
- Coconut Milk1 cup
- Vanilla Extract1 tsp
- Grated Coconut1 cup
- Gelatin2 tsp

Set out all ingredients and the serving dishes first; the cooking itself moves quickly.

Combine the milk, gelatin and sugar, stirring until dissolved, then take it off the heat.

Whisk the coconut milk with the sugar, then temper with a ladle of the hot milk, whisking hard.

Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.

Divide between glasses, press clingfilm onto the surface, chill until set, then crown with sugar.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
