Classic Apple Pie
Lattice-topped apple pie with cinnamon juices bubbling at the vents. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. A slice of sharp cheese alongside is old-school and excellent.
Ingredients

- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Ground Cinnamon1 tsp
- Shortcrust Pastry1 cup, chopped
- Apple2 cups, chopped
Instructions

Work quickly with chilled butter so it stays in visible flakes through the dough.

Toss the butter through the flour, add just enough cold water to hold, and press into a disc.

Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.

Fold the apple and shortcrust pastry through the dough until evenly distributed.

Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.
Chef's tip
Weigh your flour if you can; cup measures can be off by twenty percent either way.
