
Walnut Pie
Walnut pie in molasses-caramel filling, the pecan pie's equally-good cousin. Golden-crusted and generous, with clean slices and no sogginess. Serve warm with cream, custard or a scoop of ice cream.
Ingredients
- Butter1/2 cup, cold
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Shortcrust Pastry1 cup, chopped
- Walnuts2 cups, chopped
- Brown Sugar1/2 cup
- Egg Yolk1 cup, chopped
Instructions

Keep everything cold — the butter, the water, even the bowl — that is the whole secret of pastry.

Toss the butter through the flour, add just enough cold water to hold, and press into a disc.

Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.

Fold the walnuts and brown sugar through the dough until evenly distributed.

Bake hot until the pastry is bronzed and crisp; a cooling spell keeps the filling from running.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
