
Baked Fruit Hand Pies
Baked hand pies of spiced fruit, the lunchbox pie without the frying. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. Good warm or at room temperature the same day.
Ingredients
- Butter1/2 cup, cold
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Wheat Flour3 cups
- Ground Cinnamon1 tsp
- Brown Sugar1/2 cup
- Apple2 cups, chopped
Instructions

Work quickly with chilled butter so it stays in visible flakes through the dough.

Rub the butter into the flour until you have pea-sized crumbs, then bring it together with ice water.

Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.

Roll, fill with the apple and wheat flour, and crimp or fold the edges well to seal.

Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.

Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
