
Christmas Mince Pies
Fruit-filled mince pies dusted in sugar, the December counter of British bakeries. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. A slice of sharp cheese alongside is old-school and excellent.
Ingredients
- Butter3 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Ground Cinnamon1 tsp
- Golden Raisins2 tbsp
- Apple2 cups, chopped
Instructions

Cube the cold butter and return it to the fridge while you measure the rest.

Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.

Chill the wrapped dough thirty minutes to an hour while you prepare the apple.

Roll, fill with the apple and golden raisins, and crimp or fold the edges well to seal.

Bake at 190 C / 375 F for 35-45 minutes until deeply golden and bubbling; cool before slicing so the filling sets.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
