Jam Tarts Old School
Jam-filled pastry cups, the five-ingredient bake that starts every kid's baking life. Flaky, buttery pastry around a filling that actually tastes of the season. Good warm or at room temperature the same day.
Ingredients
- Butter3 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar1 tsp
- Golden Raisins2 tbsp
Instructions

Cube the cold butter and return it to the fridge while you measure the rest.

Rub the butter into the flour until you have pea-sized crumbs, then bring it together with ice water.

Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.

Work the golden raisins and sugar into the dough, folding gently for even distribution.

Bake at 190 C / 375 F for 35-45 minutes until deeply golden and bubbling; cool before slicing so the filling sets.
Chef's tip
Salt is the missing ingredient in most home desserts — a small pinch makes chocolate and caramel taste more like themselves.
