Chocolate Ganache Tart
Mirror-ganache chocolate tart in sweet pastry, the patisserie showpiece. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. Serve warm with cream, custard or a scoop of ice cream.
Ingredients
- Butter3 tbsp
- Heavy Cream1/4 cup
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Dark Chocolate2 cups, chopped
- Shortcrust Pastry1 cup, chopped
Instructions
- 1
Keep everything cold — the butter, the water, even the bowl — that is the whole secret of pastry.
- 2
Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.
- 3
Chill the wrapped dough thirty minutes to an hour while you prepare the dark chocolate.
- 4
Layer in the dark chocolate with the heavy cream so every slice gets a full cross-section.
- 5
Bake at 190 C / 375 F for 35-45 minutes until deeply golden and bubbling; cool before slicing so the filling sets.
Chef's tip
Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
