Ginger Treacle Tart
Ginger-laced syrup tart, the sticky British classic with a warming kick. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. Good warm or at room temperature the same day.
Ingredients
- Butter1/2 cup, cold
- Honey2 tbsp
- Salt1/2 tsp
- Ginger2-inch piece
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Shortcrust Pastry1 cup, chopped
- Brown Sugar1/2 cup
Instructions
- 1
Cube the cold butter and return it to the fridge while you measure the rest.
- 2
Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.
- 3
Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.
- 4
Fold the ginger and shortcrust pastry through the dough until evenly distributed.
- 5
Bake hot until the pastry is bronzed and crisp; a cooling spell keeps the filling from running.
Chef's tip
Salt is the missing ingredient in most home desserts — a small pinch makes chocolate and caramel taste more like themselves.
