
Mini Fruit Tarts
Pastry shells of vanilla cream topped in fruit mosaic, the tea-party tray. Flaky, buttery pastry around a filling that actually tastes of the season. Serve warm with cream, custard or a scoop of ice cream.
Ingredients
- Butter1/2 cup, cold
- Heavy Cream1/4 cup
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Blueberries1 cup, chopped
- Shortcrust Pastry1 cup, chopped
- Strawberries2 cups, hulled and sliced

Work quickly with chilled butter so it stays in visible flakes through the dough.

Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.

Refrigerate the dough; cold dough rolls cleaner and bakes flakier.

Fold the strawberries and shortcrust pastry through the dough until evenly distributed.

Bake hot until the pastry is bronzed and crisp; a cooling spell keeps the filling from running.

Weigh your flour if you can; cup measures can be off by twenty percent either way.
