Gyudon (Beef Bowl)

Thinly sliced beef and onions simmered in sweet-savory soy over a mountain of rice — Yoshinoya energy at home.

Ingredients

  • Onion1 large, sliced
  • Rice3 cups cooked
  • Soy Sauce3 tbsp
  • Sugar1 tbsp
  • Beef300 g thinly sliced
  • Mirin3 tbsp
  • Kombu Dashi1 cup

Optional extras

  • Ginger1 tsp grated
  • Eggs1 soft optional
  • Spring Onions2, sliced

Instructions

    Slice onion thin; simmer in dashi, soy, mirin and a pinch of sugar until soft.

    Add thinly sliced beef; simmer just until cooked and glossy, 3–4 minutes.

    Scoop hot rice into bowls.

  4. 4

    Ladle beef and onions with plenty of sauce over the rice.

  5. 5

    Top with spring onions or a soft egg if you like.

Chef's tip

Don't overcook the beef — thin slices need barely a minute past pink.
