Crispy tonkatsu simmered with egg and onion in sweet soy, poured over rice — the donburi that eats like a hug.

Ingredients
- Salt1/2 tsp
- Onion1, sliced
- Rice3 cups cooked
- Eggs3
- Soy Sauce3 tbsp
- Sugar1 tbsp
- Pork2 breaded cutlets / tonkatsu
- Neutral Oilfor frying
- Mirin2 tbsp
- Kombu Dashi3/4 cup
Optional extras
- Spring Onions2, sliced
- Panko Breadcrumbs1 cup if frying fresh
Instructions

Make or reheat tonkatsu; slice into strips.

Simmer onion in dashi, soy, mirin and sugar until soft.

Lay katsu on the onions; pour beaten egg over; cover until egg is just set.

Slide everything over hot rice bowls.

Finish with spring onions.
Chef's tip
The egg should be soft and custardy — pull it off heat before it scrambles dry.
