Apple Crumble
Oat-butter crumble over cinnamon apples, the thirty-minute dessert that smells like Sunday. Flaky, buttery pastry around a filling that actually tastes of the season. Good warm or at room temperature the same day.
Ingredients
- Butter3 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Brown Sugar1/2 cup
- Apple2 cups, chopped
- Rolled Oats1 cup
Instructions
- 1
Keep everything cold — the butter, the water, even the bowl — that is the whole secret of pastry.
- 2
Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.
- 3
Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.
- 4
Fold the apple and rolled oats through the dough until evenly distributed.
- 5
Bake at 190 C / 375 F for 35-45 minutes until deeply golden and bubbling; cool before slicing so the filling sets.
