Lemon Meringue Pie
Lemon curd under a toasted meringue cloud, the pie of perfect peaks. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. Serve warm with cream, custard or a scoop of ice cream.
Ingredients
- Butter1/2 cup, cold
- Salt1/2 tsp
- Lemon1
- All-Purpose Flour2 cups
- Sugar1 tsp
- Shortcrust Pastry1 cup, chopped
- Egg Yolk1 cup, chopped
Instructions
- 1
Work quickly with chilled butter so it stays in visible flakes through the dough.
- 2
Toss the butter through the flour, add just enough cold water to hold, and press into a disc.
- 3
Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.
- 4
Layer in the lemon with the egg yolk so every slice gets a full cross-section.
- 5
Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.
Chef's tip
Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
