
Fruit Galette Rustic
Free-form folded galette — the pie for people who cannot crimp. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. A slice of sharp cheese alongside is old-school and excellent.
Ingredients
- Butter1/2 cup, cold
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Shortcrust Pastry1 cup, chopped
- Brown Sugar1/2 cup
- Apple2 cups, chopped
- Lemon Zest1 tbsp
Instructions

Work quickly with chilled butter so it stays in visible flakes through the dough.

Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.

Refrigerate the dough; cold dough rolls cleaner and bakes flakier.

Work the apple and shortcrust pastry into the dough, folding gently for even distribution.

Bake at 190 C / 375 F for 35-45 minutes until deeply golden and bubbling; cool before slicing so the filling sets.
