Iced Cinnamon Rolls
Swirled cinnamon buns with brown-sugar goo, the mall-court smell recreated. Flaky, buttery pastry around a filling that actually tastes of the season. Good warm or at room temperature the same day.
Ingredients
- Butter3 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Ground Cinnamon2 cups, chopped
- Brown Sugar1/2 cup
- Active Dry Yeast2 tsp
Instructions
- 1
Keep everything cold — the butter, the water, even the bowl — that is the whole secret of pastry.
- 2
Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.
- 3
Chill the wrapped dough thirty minutes to an hour while you prepare the ground cinnamon.
- 4
Roll, fill with the ground cinnamon and brown sugar, and crimp or fold the edges well to seal.
- 5
Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.
