Glazed Yeast Doughnuts
Pillowy yeast doughnuts under vanilla glaze, the fairground ring done at home. Flaky, buttery pastry around a filling that actually tastes of the season. Serve warm with cream, custard or a scoop of ice cream.
Ingredients

- Salt1/2 tsp
- Milk1 litre
- All-Purpose Flour2 cups
- Sugar1 tsp
- Active Dry Yeast2 tsp

Cube the cold butter and return it to the fridge while you measure the rest.

Rub the butter into the flour until you have pea-sized crumbs, then bring it together with ice water.

Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.

Work the milk and active dry yeast into the dough, folding gently for even distribution.

Bake hot until the pastry is bronzed and crisp; a cooling spell keeps the filling from running.
