
Apple Puff Turnovers
Puff-pastry parcels of spiced apple, the bakery-window turnover. Flaky, buttery pastry around a filling that actually tastes of the season. Serve warm with cream, custard or a scoop of ice cream.
Ingredients
- Butter1/2 cup, cold
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Ground Cinnamon1 tsp
- Brown Sugar1/2 cup
- Puff Pastry1 cup, chopped
- Apple2 cups, chopped
Instructions

Cube the cold butter and return it to the fridge while you measure the rest.

Rub the butter into the flour until you have pea-sized crumbs, then bring it together with ice water.

Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.

Roll, fill with the apple and puff pastry, and crimp or fold the edges well to seal.

Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
