Chocolate Eclairs
Choux shells filled with cream and capped in chocolate, the patisserie counter star. Golden-crusted and generous, with clean slices and no sogginess. Good warm or at room temperature the same day.
Ingredients

- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Dark Chocolate1 cup, chopped
- Egg Yolk1 cup, chopped

Keep everything cold — the butter, the water, even the bowl — that is the whole secret of pastry.

Toss the butter through the flour, add just enough cold water to hold, and press into a disc.

Refrigerate the dough; cold dough rolls cleaner and bakes flakier.

Roll, fill with the all-purpose flour and butter, and crimp or fold the edges well to seal.

Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.
